    This slow cooked chicken comes in a smoky salsa de tomate, with peppers, courgette, fresh basil and the all-important Spanish sausage. Light and refreshing, yet still amply warming for those chilly Irish evenings, this is a perfectly balanced dish. Best served with our Creamy Irish Potato Mash or Basmati Rice.
